Chateau de Cardaillan, Graves, 2017
This is a Classic Bordeaux with a pronounced cassis, black pepper and capsicum nose; red currants, blackberries and soft, fleshy fruit on the palate. Velvety tannic structure and gentle leather notes through the finish.
Fermentation is in stainless steel with a 2-week cuvaison and ageing is for 12 months in a combination of new and one-year-old barriques. It is fined with egg whites and very lightly filtered prior to bottling. From 23 year old vines with 60% oak aging, 20% in new oak.
